I apologize for the delay in posting! I actually just started a new job two weeks ago, which has been very exciting and somewhat of a life adjustment. I went from working a job with ever-changing hours to transitioning out/job-searching for 2 months (and having lots of free time), to now working a very regular Monday to Friday job. I’m in a great situation, and feel very blessed!
I mention all this because my cooking habits are definitely adjusting as well. These days, I’ve been figuring out when to go grocery shopping, how to cook a good meal quickly so that we aren’t eating super late, and when to say, “Forget it! Let’s just get Chipotle!” Maybe these posts will become even more accessible now, since the majority of you all probably work structured jobs with regular hours too. I’ve been looking into prepping meals ahead of time, slow cooker options, making use of my freezer more often, finding super fast recipes, etc.
I may be behind on writing, but I currently have a list of thirteen different meals (including both kitchen experiments and restaurant outings) to get through! I certainly have been eating some great stuff, and will get to writing about it all soon.
The picture above shows roasted sweet potatoes with homemade guacamole, a somewhat strange combination that I fell in love with in college. I discovered the match when I stumbled upon this recipe for Avocado-Stuffed Sweet Potatoes. I love simply cooking a sweet potato in the microwave (4 or 5 minutes on each side), then throwing together some homemade guacamole to mix in. (If you’re looking at the recipe, I don’t usually add the cheese or peppers or anything. Just fresh guac and sweet potatoes!) For the snack in the photo, I peeled the potatoes and then roasted them with seasonings in the oven. My mother was so intrigued by the combination a few years ago that she decided to make a dip for Thanksgiving based on the ingredients. She baked the sweet potatoes in the oven, scooped the filing out into a 9 x 13 dish, then layered the guac on top. It was a pretty good dip!
I must say, my favorite option of the three would definitely be cooking the potato, splitting it open, then mixing in the guacamole. It’s such a treat, and makes for a very delicious–and unique–meal!
