I copied another pizza recently, this time from an amazing local restaurant called Lost Dog Cafe. I used to be a regular at the Arlington location, because I lived just a block away! I went back recently with my friend Maria, and we tried out the Tomato & Feta Pizza (“Sliced tomatoes and feta cheese, seasoned with pine nuts and rosemary.”).
It was so delicious that I decided to recreate it on another night when our friend Peter came over. As usual, I used the garlic & herb pizza dough from Trader Joe’s. I just can’t bring myself to buy normal dough anymore! I applied a very thin layer of tomato sauce to the dough (thanks, Gwyneth, for cautioning us against over-saucing pizza!), then added tomatoes, feta, and finely ground (with a food processor) pine nuts. After the pizza was done cooking, I layered on some prosciutto! The Pioneer Woman once suggested adding prosciutto to pizzas after baking… the heat from the fresh pizza warms it up just enough, and then you get to keep the nice texture.
