It isn’t that hard to make a fun pasta dish. You pick your sauce, the pasta type, the fillings… done. Sometimes I feel a bit silly posting entries or pictures of pasta dishes because there obviously isn’t much to it. Perhaps “pasta inspiration” is a better title for sharing the combinations I’m trying. If your regular rotation is getting bland, maybe ideas like this will help.
Lately, I’ve been buying a lot of gluten-free corn penne from Trader Joe’s, which I highly recommend. (I truly can’t tell the difference.) I started there, then warmed a basic marinara sauce over the stove. Since we had some goat cheese lying around, I threw that into the sauce to give it a delicious, creamy texture.
The component which I was most excited about trying was the meatless “meatballs,” by Cookin’ Canuck (and found via Pinterest). You might note that I used black beans, which likely affected the end result a bit.
I will be honest… these meatballs are a different taste! Removing gluten and meat from the meal made us feel so much lighter afterwards though. With all of the spices and flavors involved in the “meatballs,” the recipe does provide a pretty convincing substitute. Coupled with the goat cheese marinara sauce, the meal was quite a success, and it will be nice to add this dish to our recipe stash.
