We are having a great time in Greece! I am trying to get in touch with my roots as a half-Greek who has always been fascinated by my culture — but yet still has so much to learn. After a few days of meals out in Athens, we are here in Crete now and decided to take advantage of having a kitchen to prepare a simple dinner.
Tonight we dined on our balcony overlooking the pool, coast, and sea. I usually tend to go a bit overboard with the number of ingredients in my dishes, but since we were trying to keep the shopping list as simple as possible for a one night meal tonight, it was a good reminder to get back to the basics.
Our dinner consisted of a simple orzo pasta with chopped fresh parsley, chopped grape tomatoes, feta cheese (of course!), Cretian olive oil, and a bit of salt. For a side/dessert, some juicy peach slices.
