Sometimes the salsa–or sauce or dressing–can be the STAR of the show! Real Simple Magazine knocked salsa out of the park in their recent August issue with this recipe for Blistered Tomato Salsa and Roasted Chicken Thighs Tacos. The combination of feta, cilantro, roasted chicken, and salsa was a delicious idea in and of itself. But what made this recipe truly amazing was the tomatillo salsa.
Tomatillos are different than green tomatoes. Maybe everyone knows this already, but I just learned it from my local Whole Foods’ employee. Make sure you find the smaller tomatoes–which are confusingly green, yes–covered in husks.
Simply roast the tomatillos and blend together with onion, jalapeño, salt, lime, and cilantro. This recipe makes a LOT of salsa! I gave tupperwares away to both my mom and my brother–and still had some leftover. Thanks, Real Simple… and happy Mexican Monday!
