At our recent Côtes du Rhône Wine Night, I signed up to bring the appetizer. It was my goal to make something hearty and seasonal that could stand up well to the robust wine. At the same time, however, we needed a lighter appetizer since homemade pizza was on the menu for our main course. So many dips and appetizers that came to my mind highlighted cheese, bread, or both. What was the point in bringing an appetizer with similar ingredients to pizza? Besides, how much cheese and bread did we really need in one night?
I was so excited to find these Endive Spears with Bacon, Sweet Potato, and Chives by Fine Cooking. I think they would be the perfect Thanksgiving appetizer! For our wine night, the bacon paired beautifully with the Côtes du Rhône wines. The sweet potato made the appetizer feel very Fall. A few endives each were enough to hold us over until the pizza and we still had plenty of room to enjoy it.
Swapping in endives for crackers, tortilla chips, or baguette slices can be the perfect carb substitute. Besides, the endives look stunning on a platter. Endives are still a new discovery for me, but my other favorite filling so far is pomegranate seeds, goat cheese, honey, and freshly ground black pepper.
The recipe by Fine Cooking calls for sour cream, but I rarely use sour cream these days because plain Greek yogurt tastes the same to me and is loaded with nutritional benefits.
We also ate the leftover sautéed bacon and sweet potato mix with an egg on top the next morning for a delicious breakfast hash!
