Everyone needs a go-to Christmas cookie recipe. My favorite desserts usually involve chocolate, so my personal choice over the past few years has been this one: Chewy Double Chocolate Peppermint Cookies by Minimalist Baker. I’ve found peppermint extract to be a great investment!
For the first time, I tried making the dough in advance and letting it sit in the fridge, mostly for convenience. However, as I was researching the refrigeration process, I also learned that cookies are often even more delicious after refrigerating the dough for a short period of time. I let this dough sit for 36 hours — the ideal time according to Bakepedia.
While I’m honestly not sure if the taste was any better, I was able to refrigerate the dough in a log… which meant I could slice the cookies into perfect little circles! For me, THIS is the reason to put cookie dough in the fridge. It is so much easier to shape.
