The Super Bowl is one of America’s favorite eating holidays — maybe even a runner-up to Thanksgiving! In preparation for the snacking feast, I am excited to share about these Buffalo Cauliflower Bites by Ashley at Edible Perspective. “Vegetarians are people too,” says Chef Spike Mendelsohn on his Good Stuff Eatery menu. Truth! As my love for buffalo sauce grows, it was fun to try this version of buffalo wings with cauliflower instead of chicken.
I think Chris actually enjoyed the dish even more than I did. This may be obvious, but just don’t expect the bites to taste like chicken. I was impressed by the cauliflower’s role in presenting buffalo sauce here. Cauliflower is really an up-and-coming veggie these days, serving as a blank slate ingredient in recipes such as pizza crust, alfredo sauce, and more.
We tried the bites with a simple dip consisting of Greek yogurt, dill spice, celery salt, and juice from half a lemon — somewhat similar to this sauce. In terms of other recipe adjustments, I also added an extra cup of water to the dredge mixture since I found that the result was a little too much like sticky dough before this addition.
In my opinion, buffalo sauce anything is the perfect accompaniment to watching sports. On that note, I am also planning to share a super addicting buffalo popcorn recipe later in the week!
