This pineapple and beef tacos dish is probably my favorite recipe discovery of the summer! Thanks for the inspiration, Real Simple Magazine. We decided to make the meal after an (unintentionally) long taco hiatus, which probably made everything taste even better. I cooked beef all day in the crockpot in pineapple juice instead of using marinated pork like the original recipe called for.
The result was delicious corn tacos filled with shredded spicy and fruity barbacoa, chopped jalapeños, diced pineapples, red onion slices, fresh cilantro, crumbled feta, and a few squeezes of fresh lime juice. We threw a table cloth on our coffee table, spread out bowls of all of the ingredients, and devoured the feast sitting on the floor! We’re at the beach now with my family and made the meal for everyone last night. This recipe–something different and summery for the taco-lover–is definitely a keeper.
